◁ PORK CHOPS with BROCCOLI MASH

This meal scores a perfect ten on the comfort food scale, and it’s so easy to prepare! Besides, it’s incredibly nutritious. The creamy broccoli mash delivers a hefty dose of vitamins C and K, plus B vitamins and manganese, while the perfectly seared pork chops provide satiating protein.

Prep time: 7 minutes

Cook time: 15 minutes

Yield: 4 servings

1 recipe Broccoli Mash

2 tablespoons (30 ml) olive oil

4 thick boneless pork loin chops (11/2 pounds [680 g])

1 teaspoon dried thyme

1/2 teaspoon sea salt

1. Prepare the Broccoli Mash following the directions.

2. While the vegetables are cooking, heat the olive oil over medium-high heat in a large skillet. Season the pork chops on both sides with the thyme and salt. When the oil is hot, sear the chops on both sides until golden brown, about 2 minutes on each side. Remove from the heat, cover with a lid, and let rest until you are finished making the Broccoli Mash.

To assemble: Divide the ingredients evenly among 4 glass containers. Start with a layer of broccoli mash at the bottom, then top with a pork chop. Drizzle the meat with leftover cooking juices.

Note: Store for up to 5 days in an airtight container in the refrigerator, or freeze for up to 4 months.
